Ingredients
- 800 g mackerel fillet (fresh)
- 2 shallots
- 1 carrot (small)
- 3 tbsp chive rings
- fish stock
- white wine
- 200 g smoked mackerel fillet
- 120 g butter (melted)
- 4 tbsp olive oil
- salt
- pepper (freshly ground)
- lemon juice (freshly squeezed)
Instructions
- 1. Preheat the oven to 150 degrees Celsius fan-forced.
- 2. Peel the shallots and chop them finely.
- 3. Peel the carrot and chop it finely as well.
- 4. Wash the leek and slice it into rings.
- 5. Place the mackerel fillets (skinless), shallots, carrots, and leek into a baking dish.
- 6. Pour 4 to 5 tablespoons of fish stock and 3 tablespoons of white wine over the ingredients.
- 7. Cover the dish and bake it in the oven for approx. 30 minutes.
- 8. Remove the dish from the oven and let the contents cool down completely.
- 9. Take the mackerel fillets out of the dish and break them into small pieces.
- 10. Mix the broken mackerel fillets with the smoked mackerel.
- 11. Use the stewed vegetables for another dish.
- 12. Take 3 tablespoons of the cooking liquid from the baking dish.
- 13. If necessary, add a little more fish stock.
- 14. Whip the butter with the cooking liquid until frothy.
- 15. Stir the oil into the butter mixture.
- 16. Season the mixture with salt, pepper, and 1 tablespoon of lemon juice.
- 17. Gently fold the mackerel mixture into the sauce.
- 18. Blend everything finely until a creamy paste forms.
- 19. Fill the paste into a serving dish.
- 20. Decorate the surface with chive rings.
- 21. Place the dish in the refrigerator for at least 24 hours to let the flavors meld.
