🍽️ Grilled Mackerel with Orange Dressing and Spring Onions

Ingredients
- 8 mackerel fillets (with skin à approx. 100 g)
- 1 lime (juice)
- olive oil
- 1 orange
- 2 spring onions
- 1 tsp honey
- 1 tbsp freshly chopped coriander leaves
- lime zest (for garnishing)
Instructions
- 1. Rinse the fish fillets under cold water.
- 2. Pat the fillets completely dry with a kitchen towel.
- 3. Drizzle the fillets with the lime juice.
- 4. Season the fish with salt and pepper to taste.
- 5. Brush the fillets lightly with oil.
- 6. Place the fillets skin-side down on the hot grill.
- 7. Grill the fillets for about 5 minutes until golden brown.
- 8. Turn the fillets over once.
- 9. Grill the fillets for another 3 to 4 minutes until cooked through.
- 10. Peel the orange thoroughly and remove the flesh in segments (fillet).
- 11. Catch the released orange juice in a bowl while doing this.
- 12. Squeeze the remaining orange peel to extract the rest of the juice.
- 13. Mix the collected juice with the honey.
- 14. Wash the spring onions thoroughly.
- 15. Remove the tough ends of the spring onions.
- 16. Slice the spring onions diagonally into thin rings.
- 17. Add the fillets, the spring onion rings, and the coriander leaves to the orange juice-honey mixture.
- 18. Place the grilled mackerel fillets on a serving plate.
- 19. Distribute the orange sauce evenly over the fillets.
- 20. Garnish the dish with lime wedges.
- 21. Serve the mackerel immediately.
