🍽️ Grilled Mackerel with Vegetables

Ingredients
- 2 mackerel fillets
- salt
- pepper (from the mill)
- lemon juice
- 1 garlic clove
- 1 tbsp oil
- 250 g sweet potatoes (batatas)
- 200 g beans
- salt
- 1 tbsp butter
Instructions
- 1. Rinse the mackerel fillets, pat them dry with a kitchen towel, and remove any bones with tweezers. Cut the fillets in half, season with salt and pepper, and drizzle with a little lemon juice.
- 2. Cook the sweet potatoes with the skin on in boiling salted water for 20 minutes. Let them cool down and then slice them into thick rounds.
- 3. Wash the beans, trim the ends, and boil them in plenty of boiling salted water for 8 to 10 minutes (blanching means cooking briefly in boiling water). Immediately shock them in ice-cold water to keep them crisp, and let them drain.
- 4. Mix the oil with pressed garlic.
- 5. Grill the mackerel and sweet potato slices on the hot grill until done. Brush them with the garlic oil while grilling.
- 6. Toss the beans in hot butter, season with salt and pepper.
- 7. Serve the mackerel fillets on top of the sweet potato slices and beans.
