  1. 1. Rinse the mackerels under cold water.
  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Rub the fish inside and out with salt and pepper.
  4. 4. Drizzle some lemon juice over the fish.
  5. 5. Preheat the oven to 180 degrees Celsius.
  6. 6. Wash the fresh herbs under running water.
  7. 7. Peel the garlic cloves.
  8. 8. Finely chop the herbs and the garlic.
  9. 9. Add the chopped herb and garlic mixture to the diced tomatoes.
  10. 10. Add four tablespoons of oil.
  11. 11. Mix the ingredients in a bowl well together.
  12. 12. Fill the herb and tomato mixture into the belly cavities of the fish.
  13. 13. Cut four large pieces of aluminum foil.
  14. 14. Brush the foil pieces with the remaining oil.
  15. 15. Place one fish on each piece of foil.
  16. 16. Fold the foil tightly around the fish.
  17. 17. Place the packets side by side on a baking sheet.
  18. 18. Put the tray into the preheated oven.
  19. 19. Bake the fish for 30 to 35 minutes.
