🍽️ Oven Baked Mackerel in Foil

Ingredients
- 4 Mackerel (à 350g, cleaned and scaled)
- Salt, Pepper from the mill
- Juice of one Lemon
- 1 tbsp Thyme leaves
- 1 tsp Rosemary needles
- 1 bunch flat-leaf Parsley
- 2 Garlic cloves
- 4 tbsp Tomato cubes
- 6 tbsp Olive oil
Instructions
- 1. Rinse the mackerels under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Rub the fish inside and out with salt and pepper.
- 4. Drizzle some lemon juice over the fish.
- 5. Preheat the oven to 180 degrees Celsius.
- 6. Wash the fresh herbs under running water.
- 7. Peel the garlic cloves.
- 8. Finely chop the herbs and the garlic.
- 9. Add the chopped herb and garlic mixture to the diced tomatoes.
- 10. Add four tablespoons of oil.
- 11. Mix the ingredients in a bowl well together.
- 12. Fill the herb and tomato mixture into the belly cavities of the fish.
- 13. Cut four large pieces of aluminum foil.
- 14. Brush the foil pieces with the remaining oil.
- 15. Place one fish on each piece of foil.
- 16. Fold the foil tightly around the fish.
- 17. Place the packets side by side on a baking sheet.
- 18. Put the tray into the preheated oven.
- 19. Bake the fish for 30 to 35 minutes.
