  3. 3. Stir constantly while adding the cornmeal.
  4. 4. Continue cooking the mixture until it thickens.
  5. 5. Let the mixture cool down until it is lukewarm.
  6. 6. Whisk the egg yolk into the cooled mixture.
  7. 7. Add the drained corn.
  8. 8. Chop 50 grams of bean sprouts and add them.
  9. 9. Roughly fold in the egg whites.
  10. 10. Heat a pan and grease it with oil.
  11. 11. Fry two omelets from the mixture in the pan.
  12. 12. Remove the omelets from the pan and place them on plates.
  13. 13. Top the omelets with fresh bean sprouts.
  14. 14. Drizzle sour cream over the omelets.
  15. 15. Garnish the dish with fresh chives.
