🍽️ Crispy Corn Fritters with Salmon

Ingredients
- 2 fresh corn cobs
- 2 egg yolks
- 1 egg white
- 3 tbsp flour
- salt
- pepper
- ghee (for frying)
- 0.5 bunch watercress
- 4 sprigs dill
- 150 g fine smoked salmon
- 4 tbsp keta caviar
- 4 tbsp sour cream
Instructions
- 1. Carefully cut the corn kernels off the cob and rinse them briefly. Place the corn in a bowl and mix it with the egg yolk, a pinch of salt, and pepper. Whip the egg whites until very stiff and gently fold them into the corn mixture. Sprinkle the flour over the top and stir it in carefully.
- 2. Heat ghee in a frying pan. Fry the fritters in batches, about 2 minutes on each side, until golden yellow. Place the finished fritters on kitchen paper to absorb excess fat, then arrange them on plates.
- 3. Distribute watercress and dill over the fritters. Place the salmon pieces on the herbs and garnish everything with a dollop of crème fraîche and some salmon caviar.
