  1. 1. Mix both types of flour with the milk until smooth.
  2. 2. Stir the eggs into the mixture.
  3. 3. Season the batter with salt and cayenne pepper.
  4. 4. Adjust the consistency: Add more or less milk if needed so the batter is not too runny.
  5. 5. Drain the corn kernels well or thaw them completely.
  6. 6. Wash the spring onions and trim off the tough ends.
  7. 7. Finely chop the spring onions.
  8. 8. Heat oil in a pan until hot.
  9. 9. Add the drained corn kernels and chopped spring onions to the batter and mix everything together.
  10. 10. Place about one tablespoon of batter into the hot pan to form a small patty.
  11. 11. Fry the patty for about two minutes until golden brown.
  12. 12. Flip the patty.
  13. 13. Cook the other side for another two minutes.
  14. 14. Fry the sage leaves briefly in the hot oil.
  15. 15. Let the fried sage leaf drain on a paper towel.
  16. 16. Garnish the finished patties with the sage leaf and serve.
