🍽️ Spring Radish with Fresh Chervil Dressing

Ingredients
- 600 g turnip
- salt
- 4 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp hot mustard
- 0.5 tsp sugar
- 6 tbsp rapeseed oil
- 1 handful chervil
- pepper (from the mill)
- chervil (for garnishing)
Instructions
- 1. Peel the spring radishes.
- 2. Cut the radishes into wedges.
- 3. Bring water to a boil and add some salt.
- 4. Cook the radish wedges for about 5 minutes until they are still crisp-tender.
- 5. Whisk vinegar, lemon juice, mustard, sugar, and oil together in a bowl to make the dressing.
- 6. Rinse the chervil briefly under running water.
- 7. Pat the chervil dry with a kitchen towel.
- 8. Finely chop the chervil.
- 9. Stir the chopped chervil into the dressing.
- 10. Season the dressing with salt and pepper to taste.
- 11. Drain the cooked radishes.
- 12. Divide the radishes among small plates.
- 13. Drizzle the chervil dressing over the radishes.
- 14. Garnish the dish with some fresh chervil.
- 15. Serve the radishes immediately.
