  1. 1. Preheat the oven to 150 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Grind the almonds together with the powdered sugar until very fine. Sieve the mixture through a fine mesh directly onto a baking sheet. Bake the mixture in the oven for 5 to 7 minutes. Remove the tray and let the almond mixture cool down completely.
  3. 3. Whip the egg whites in a bowl until stiff. Slowly stir in the sugar while continuing to whip. Add a few drops of green food coloring and mix until evenly distributed. Add the cooled almond mixture and gently fold it in until you have a smooth batter. Fill the batter into a piping bag. Pipe about 30 small dollops onto a baking sheet lined with baking paper. Let the dollops dry in the air for about 1 hour until they form a firm skin. Bake the macarons in the preheated oven (150 degrees) for 10 to 12 minutes. Carefully remove them from the tray and let them cool.
  4. 4. Peel the kiwis and the banana. Puree the fruit together with the lemon juice and powdered sugar until smooth. Take half of the cooled macarons and spread the banana cream on the bottom side. Gently press a second macaron on top to form a sandwich structure.
