🍰 Fluffy Macadamia Muffins

Ingredients
- 2 Nectarines
- 100 g roughly chopped Macadamia nuts
- 200 g flour
- 2 heaped tsp baking powder
- 150 g sugar
- 200 g sour cream
- 80 g melted butter
- 1 pinch salt
- 2 eggs
- 12 paper muffin cups
- 12 Macadamia nuts (for garnish)
Instructions
- 1. Place the paper liners into the cups of your muffin tin.
- 2. Wash the nectarines thoroughly under running water.
- 3. Cut the nectarines into quarters.
- 4. Remove the pits from the nectarine quarters.
- 5. Chop the nectarine flesh into coarse cubes.
- 6. Put the flour and the baking powder into a bowl.
- 7. Mix the flour with the baking powder well.
- 8. Put the sugar, the crème fraîche, the butter, and the salt into a separate bowl.
- 9. Stir the butter-sugar-crème fraîche mixture until smooth.
- 10. Whisk the eggs in a small bowl.
- 11. Add the whisked eggs to the butter-sugar mixture.
- 12. Stir the eggs well into the butter-sugar mixture.
- 13. Preheat the oven to 180 degrees Celsius conventional heat.
- 14. Add the flour mixture, the nuts, and the nectarine cubes to the batter.
- 15. Stir the ingredients quickly until they are just distributed.
- 16. Fill the batter evenly into the liners.
- 17. Place the muffin tin in the center of the oven.
- 18. Bake the muffins for 20 to 25 minutes.
- 19. Take the muffins out of the oven.
- 20. Let the muffins cool in the tin for five more minutes.
- 21. Take the muffins out of the tin carefully.
- 22. Place the muffins on a wire rack.
- 23. Let the muffins cool completely on the wire rack.
- 24. Garnish the finished muffins with macadamia nuts.
- 25. Serve the muffins.
