  2. 2. Pat the fillets completely dry with a kitchen towel.
  3. 3. Season the fillets on both sides with salt and pepper.
  4. 4. Finely chop the macadamia nuts.
  5. 5. Mix the chopped nuts in a shallow dish with the cocoa nibs and breadcrumbs.
  6. 6. Coat the fillets one by one in flour.
  7. 7. Dip the floured fillets into the beaten eggs.
  8. 8. Press the fillets firmly into the nut mixture until they are covered on all sides.
  9. 9. Heat oil in a pan.
  10. 10. Fry the breaded fillets in the pan until golden brown and crispy on both sides.
  11. 11. Place the finished chicken on kitchen paper to absorb excess fat.
  12. 12. Serve the chicken on a bed of fresh leaf salad.
  13. 13. Garnish the dish with spicy chili threads as desired.
