🍽️ Fun Tomato Soup

Ingredients
- 1 onion
- 1 clove of garlic
- 150 g celeriac
- 1 carrot
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 600 ml vegetable broth
- 600 g tomatoes
- 1 sprig basil
- 100 ml whipping cream
- sea salt
- 1 pinch sugar
- 4 hard-boiled eggs
- 4 black olives (pitted)
- 50 ml whipping cream
Instructions
- 1. Preheat a large pan or pot over medium heat.
- 2. Add a splash of olive oil to the hot pan.
- 3. Peel the onion, garlic, celery, and carrot.
- 4. Dice the vegetables into very small cubes.
- 5. Sauté the vegetables in the hot oil for 2 to 3 minutes.
- 6. Stir the tomato paste into the vegetables.
- 7. Deglaze the pan with the vegetable broth.
- 8. Wash the tomatoes thoroughly.
- 9. Cut out the hard stem base from the tomatoes.
- 10. Cut the tomatoes into coarse chunks.
- 11. Add the tomato chunks to the soup.
- 12. Add the basil to the soup.
- 13. Let the soup simmer on low heat for about 30 minutes.
- 14. Puree the soup finely with a hand blender.
- 15. Strain the soup through a fine sieve to make it completely smooth.
- 16. Add the cream to the soup.
- 17. Bring the soup to a brief boil.
- 18. Check the consistency of the soup.
- 19. If the soup is too thick, add a little more broth.
- 20. If the soup is too thin, let it simmer a bit longer to reduce.
- 21. Season the soup with sea salt and sugar to taste.
- 22. Serve the finished soup onto plates.
- 23. Halve the eggs and place the halves as eyes in the soup.
- 24. Halve the olives and place them as eyes in the soup as well.
- 25. Draw a funny face in the soup using a spoonful of cream.
