  1. 1. Stir the yeast into about 200 milliliters of lukewarm water until smooth.
  2. 2. Mix the flour with the salt in a bowl.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Pour the yeast water and the oil into the well.
  5. 5. Knead the ingredients by hand or with the dough hook of an electric hand mixer into a smooth dough.
  6. 6. Knead the dough vigorously on a floured work surface for about 10 minutes.
  7. 7. Let the dough rise, covered, in a warm place for about 1 hour.
  8. 8. Preheat the oven to 240 degrees Celsius with top and bottom heat.
  9. 9. Wash the bell pepper and halve it.
  10. 10. Remove the seeds and the white inner membrane from the bell pepper.
  11. 11. Cut the bell pepper into thin strips.
  12. 12. Halve the olives.
  13. 13. Wash the chives and shake them dry.
  14. 14. Season the tomatoes with salt and pepper.
  15. 15. Drain the mozzarella.
  16. 16. Cut the mozzarella lengthwise into about 12 thin slices.
  17. 17. Knead the dough briefly once more.
  18. 18. Divide the dough into 8 equal portions.
  19. 19. Roll the portions into small, round flatbreads.
  20. 20. Place the flatbreads on a baking sheet lined with baking paper.
  21. 21. Spread the tomato sauce over the flatbreads.
  22. 22. Top each flatbread with 3 mozzarella slices.
  23. 23. Place a halved olive on each mozzarella slice.
  24. 24. Arrange 1 to 2 pepper strips under a mozzarella slice.
  25. 25. Bake the pizzas in the preheated oven for about 10 minutes.
  26. 26. Remove the pizzas from the oven.
  27. 27. Garnish the pizzas with chives and serve.
