  1. 1. Rinse the lemon under hot water.
  2. 2. Dry the lemon with a cloth.
  3. 3. Finely grate the yellow zest of the lemon.
  4. 4. Squeeze the lemon to extract the juice.
  5. 5. Stir the quark with the yogurt.
  6. 6. Add the lemon juice to the quark mixture.
  7. 7. Sweeten the cream to your liking with sweetener.
  8. 8. Fill the cream into four small bowls.
  9. 9. Place the bowls in the refrigerator for about one hour.
  10. 10. Put two tablespoons of water and erythritol into a small saucepan.
  11. 11. Bring the mixture in the saucepan to a boil.
  12. 12. Reduce the heat to very low.
  13. 13. Let the mixture simmer for about three minutes.
  14. 14. Add the grated lemon zest to the saucepan.
  15. 15. Let the zest cook along for about two minutes.
  16. 16. Let the syrup mixture cool down for about twenty minutes.
  17. 17. Drizzle the cooled lemon syrup over the cream.
  18. 18. Serve the cream immediately.
