🍰 Refreshing Low-Carb Lemon Cream

Ingredients
- 1 organic lemon
- 250 g low-fat quark
- 100 g yogurt (1.5% fat)
- liquid sweetener (to taste)
- 10 g powdered sugar from erythritol (1 tbsp)
Instructions
- 1. Rinse the lemon under hot water.
- 2. Dry the lemon with a cloth.
- 3. Finely grate the yellow zest of the lemon.
- 4. Squeeze the lemon to extract the juice.
- 5. Stir the quark with the yogurt.
- 6. Add the lemon juice to the quark mixture.
- 7. Sweeten the cream to your liking with sweetener.
- 8. Fill the cream into four small bowls.
- 9. Place the bowls in the refrigerator for about one hour.
- 10. Put two tablespoons of water and erythritol into a small saucepan.
- 11. Bring the mixture in the saucepan to a boil.
- 12. Reduce the heat to very low.
- 13. Let the mixture simmer for about three minutes.
- 14. Add the grated lemon zest to the saucepan.
- 15. Let the zest cook along for about two minutes.
- 16. Let the syrup mixture cool down for about twenty minutes.
- 17. Drizzle the cooled lemon syrup over the cream.
- 18. Serve the cream immediately.
