  1. 1. Beat the egg whites in a mixing bowl with a hand mixer on the highest setting until very stiff.
  2. 2. Sift the powdered sugar and stir it into the egg whites gradually.
  3. 3. Remove five heaping tablespoons of the mixture and set it aside to brush the stars later.
  4. 4. Cut the vanilla pod in half lengthwise and scrape out the seeds with a knife.
  5. 5. Gently stir the vanilla seeds, cinnamon, almonds, and hazelnuts into the remaining egg whites using a cooking spoon or spatula.
  6. 6. Knead the ingredients into a compact dough.
  7. 7. Place the dough between two sheets of cling film and roll it out with a rolling pin to a thickness of about one centimeter.
  8. 8. Cut out star shapes from the dough.
  9. 9. Place the cookies on a baking sheet lined with baking paper.
  10. 10. Brush the stars with the reserved egg whites using a teaspoon or a brush.
  11. 11. Bake the stars in the preheated oven at 140 degrees Celsius fan-forced for 10 to 15 minutes.
  12. 12. Make sure the stars do not turn brown.
