🍽️ Low-Carb Cinnamon Stars

Ingredients
- 4 egg whites
- 200 g powdered sugar from erythritol
- 1 vanilla pod
- 1.5 tsp cinnamon
- 200 g ground almond kernels
- 200 g ground hazelnuts
Instructions
- 1. Beat the egg whites in a mixing bowl with a hand mixer on the highest setting until very stiff.
- 2. Sift the powdered sugar and stir it into the egg whites gradually.
- 3. Remove five heaping tablespoons of the mixture and set it aside to brush the stars later.
- 4. Cut the vanilla pod in half lengthwise and scrape out the seeds with a knife.
- 5. Gently stir the vanilla seeds, cinnamon, almonds, and hazelnuts into the remaining egg whites using a cooking spoon or spatula.
- 6. Knead the ingredients into a compact dough.
- 7. Place the dough between two sheets of cling film and roll it out with a rolling pin to a thickness of about one centimeter.
- 8. Cut out star shapes from the dough.
- 9. Place the cookies on a baking sheet lined with baking paper.
- 10. Brush the stars with the reserved egg whites using a teaspoon or a brush.
- 11. Bake the stars in the preheated oven at 140 degrees Celsius fan-forced for 10 to 15 minutes.
- 12. Make sure the stars do not turn brown.
