🍰 Low-Carb Cinnamon Rolls

Ingredients
- 80 g grated mozzarella
- 150 g cream cheese
- 175 g almond flour (partially defatted) + a little for working
- 1 tsp baking powder
- 70 g raw cane sugar
- 1 egg
- 15 g butter
- 2 tbsp cinnamon
Instructions
- 1. Put the mozzarella and 100 grams of cream cheese into a bowl.
- 2. Warm the cheese briefly in the microwave.
- 3. Stir the cheese and warm it again.
- 4. Repeat warming and stirring until the cheese types are well combined.
- 5. Mix the almond flour with the baking powder.
- 6. Add the flour mixture, 30 grams of sugar, and the egg to the cheese.
- 7. Knead everything into a smooth dough.
- 8. Place the dough on a lightly floured work surface.
- 9. Shape the dough into a rectangle about 25 by 30 centimeters.
- 10. Make sure the dough is about 0.5 centimeters thick.
- 11. Melt the butter.
- 12. Mix the melted butter with 20 grams of sugar and cinnamon.
- 13. Brush the dough with the cinnamon-butter mixture.
- 14. Roll up the dough lengthwise.
- 15. Cut the roll into pieces about 3 centimeters thick.
- 16. Place the pieces into an ovenproof dish.
- 17. Preheat the oven.
- 18. Bake the rolls at 175 degrees conventional heat, 150 degrees fan-forced, or gas mark 2.
- 19. Bake for 20 to 25 minutes.
- 20. Remove the rolls from the oven when they are golden brown.
- 21. Let the rolls cool down.
- 22. Mix the remaining cream cheese with the remaining sugar.
- 23. Spread the cheese-sugar mixture over the cooled rolls.
