  1. 1. Wash the zucchini thoroughly under running water.
  2. 2. Cut the zucchini into sticks about as thick as your finger.
  3. 3. Put the oil, almond flour, parmesan, paprika powder, and herbs into a large bowl.
  4. 4. Toss the zucchini sticks in the bowl until they are evenly coated with the breading.
  5. 5. Line a baking tray with baking paper.
  6. 6. Spread the breaded zucchini sticks evenly on the tray.
  7. 7. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan / gas mark 3).
  8. 8. Bake the fries for 15 to 20 minutes until golden brown.
  9. 9. Turn the zucchini sticks once after 10 to 12 minutes.
  10. 10. Wash the chives and shake them dry.
  11. 11. Cut the chives into fine rings.
  12. 12. Mix the Greek yogurt with the white wine vinegar, olive oil, and chives.
  13. 13. Season the dip with salt and pepper to taste.
  14. 14. Serve the warm zucchini fries together with the yogurt dip.
