🍽️ Crispy Zucchini Fries with Yogurt Dip

Ingredients
- 500 g zucchini
- 2 tbsp oil
- 50 g almond flour
- 50 g parmesan
- 1 tsp paprika powder
- 1 tbsp dried herbs
- 150 g greek yogurt
- 1 tbsp white wine vinegar
- 1 tsp olive oil
- 1 handful chives (à 5 g)
- salt
- pepper
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Cut the zucchini into sticks about as thick as your finger.
- 3. Put the oil, almond flour, parmesan, paprika powder, and herbs into a large bowl.
- 4. Toss the zucchini sticks in the bowl until they are evenly coated with the breading.
- 5. Line a baking tray with baking paper.
- 6. Spread the breaded zucchini sticks evenly on the tray.
- 7. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan / gas mark 3).
- 8. Bake the fries for 15 to 20 minutes until golden brown.
- 9. Turn the zucchini sticks once after 10 to 12 minutes.
- 10. Wash the chives and shake them dry.
- 11. Cut the chives into fine rings.
- 12. Mix the Greek yogurt with the white wine vinegar, olive oil, and chives.
- 13. Season the dip with salt and pepper to taste.
- 14. Serve the warm zucchini fries together with the yogurt dip.
