  1. 1. Wash the cauliflower and remove the tough stems.
  2. 2. Cut the cauliflower into large chunks.
  3. 3. Pulse the cauliflower pieces in a food processor or blender until they resemble fine crumbs.
  4. 4. Grate the Emmental cheese finely.
  5. 5. Mix the cauliflower, grated cheese, flour, and eggs together in a bowl.
  6. 6. Season the mixture with salt and a pinch of freshly grated nutmeg.
  7. 7. Line a baking tray with baking paper.
  8. 8. Spread the cauliflower mixture evenly over the tray.
  9. 9. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
  10. 10. Bake the base for 20 minutes until golden brown.
  11. 11. Remove the base from the oven.
  12. 12. Turn the base out onto a fresh piece of baking paper.
  13. 13. Peel off the old baking paper from the base.
  14. 14. Let the base cool for about 5 minutes.
  15. 15. Line the baking tray with fresh baking paper again.
  16. 16. Chop the sun-dried tomatoes into small pieces.
  17. 17. Peel the garlic and chop it finely.
  18. 18. Mix the tomatoes, garlic, tomato paste, and chopped tomatoes together in a bowl.
  19. 19. Season the tomato sauce with salt and pepper to taste.
  20. 20. Wash the basil and shake it dry.
  21. 21. Pluck the basil leaves from the stems.
  22. 22. Spread the tomato sauce over the cooled cauliflower base.
  23. 23. Sprinkle the basil leaves over the sauce.
  24. 24. Distribute the mozzarella cheese evenly over the top.
  25. 25. Carefully roll up the pizza roll using the baking paper.
  26. 26. Bake the roll for another 15 minutes in the oven until the cheese is melted.
  27. 27. Remove the pizza roll from the oven.
  28. 28. Let the roll rest for 5 minutes.
  29. 29. Slice the roll into pieces.
