🍕 Low-Carb Pizza Roll with Cauliflower

Ingredients
- 600 g cauliflower (1/2 cauliflower)
- 200 g Emmental cheese in a block (45 % fat in dry matter)
- 30 g spelt wholemeal flour (2 tbsp)
- 3 eggs
- salt
- nutmeg
- 80 g dried tomatoes (soft tomatoes)
- 1 clove of garlic
- 30 g tomato paste (2 tbsp)
- 200 g chunky tomatoes (can)
- pepper
- 4 sprigs basil
- 150 g grated mozzarella (45 % fat in dry matter)
Instructions
- 1. Wash the cauliflower and remove the tough stems.
- 2. Cut the cauliflower into large chunks.
- 3. Pulse the cauliflower pieces in a food processor or blender until they resemble fine crumbs.
- 4. Grate the Emmental cheese finely.
- 5. Mix the cauliflower, grated cheese, flour, and eggs together in a bowl.
- 6. Season the mixture with salt and a pinch of freshly grated nutmeg.
- 7. Line a baking tray with baking paper.
- 8. Spread the cauliflower mixture evenly over the tray.
- 9. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 10. Bake the base for 20 minutes until golden brown.
- 11. Remove the base from the oven.
- 12. Turn the base out onto a fresh piece of baking paper.
- 13. Peel off the old baking paper from the base.
- 14. Let the base cool for about 5 minutes.
- 15. Line the baking tray with fresh baking paper again.
- 16. Chop the sun-dried tomatoes into small pieces.
- 17. Peel the garlic and chop it finely.
- 18. Mix the tomatoes, garlic, tomato paste, and chopped tomatoes together in a bowl.
- 19. Season the tomato sauce with salt and pepper to taste.
- 20. Wash the basil and shake it dry.
- 21. Pluck the basil leaves from the stems.
- 22. Spread the tomato sauce over the cooled cauliflower base.
- 23. Sprinkle the basil leaves over the sauce.
- 24. Distribute the mozzarella cheese evenly over the top.
- 25. Carefully roll up the pizza roll using the baking paper.
- 26. Bake the roll for another 15 minutes in the oven until the cheese is melted.
- 27. Remove the pizza roll from the oven.
- 28. Let the roll rest for 5 minutes.
- 29. Slice the roll into pieces.
