🍰 Low-Carb Marble Cake

Ingredients
- 6 Eggs
- 1 Lemon
- 2 Vanilla pods
- 50 g Butter
- 90 g Xucker (Xylitol)
- 250 g Quark (20% fat)
- 220 g ground almonds
- 1 pinch Baking soda
- 1 pinch Salt
- 2 tbsp Cocoa powder (highly defatted)
Instructions
- 1. Line a loaf pan with baking paper.
- 2. Separate the eggs. Place the egg whites in the fridge to cool.
- 3. Wash the lemon under hot water and dry it.
- 4. Grate the lemon zest.
- 5. Halve the vanilla pods.
- 6. Scrape out the vanilla seeds.
- 7. Beat butter and Xucker (sugar substitute) in a large bowl until creamy.
- 8. Add the egg yolks one by one to the butter mixture.
- 9. Stir in the quark (curd cheese).
- 10. Stir in the lemon zest.
- 11. Stir in the vanilla seeds.
- 12. Add ground almonds and baking soda to the batter.
- 13. Mix everything well until a batter forms.
- 14. Whip the egg whites with salt until stiff.
- 15. Gently fold the egg whites into the batter.
- 16. Divide the batter into two halves.
- 17. Stir cocoa powder into one half of the batter.
- 18. Place the light batter into the pan.
- 19. Place the chocolate batter on top.
- 20. Swirl the batter with a wooden skewer or knife.
- 21. Create the marble pattern.
- 22. Preheat the oven to 160 °C (fan 140 °C, gas mark 2).
- 23. Bake the cake for about 45 minutes.
- 24. Let the cake cool down slightly.
- 25. Serve the cake warm or cold.
