  1. 1. Line a loaf pan with baking paper.
  2. 2. Separate the eggs. Place the egg whites in the fridge to cool.
  3. 3. Wash the lemon under hot water and dry it.
  4. 4. Grate the lemon zest.
  5. 5. Halve the vanilla pods.
  6. 6. Scrape out the vanilla seeds.
  7. 7. Beat butter and Xucker (sugar substitute) in a large bowl until creamy.
  8. 8. Add the egg yolks one by one to the butter mixture.
  9. 9. Stir in the quark (curd cheese).
  10. 10. Stir in the lemon zest.
  11. 11. Stir in the vanilla seeds.
  12. 12. Add ground almonds and baking soda to the batter.
  13. 13. Mix everything well until a batter forms.
  14. 14. Whip the egg whites with salt until stiff.
  15. 15. Gently fold the egg whites into the batter.
  16. 16. Divide the batter into two halves.
  17. 17. Stir cocoa powder into one half of the batter.
  18. 18. Place the light batter into the pan.
  19. 19. Place the chocolate batter on top.
  20. 20. Swirl the batter with a wooden skewer or knife.
  21. 21. Create the marble pattern.
  22. 22. Preheat the oven to 160 °C (fan 140 °C, gas mark 2).
  23. 23. Bake the cake for about 45 minutes.
  24. 24. Let the cake cool down slightly.
  25. 25. Serve the cake warm or cold.
