🍽️ Low-Carb Chicken Curry

Ingredients
- 800 g chicken breast fillet
- 500 g Greek yogurt
- 2 large apples (e.g. Jona Gold or Golden Delicious)
- 3 cm ginger (freshly grated)
- 1 dried chili (grated)
- 2 tsp turmeric
- curry (to taste)
- cumin
- 3 tbsp sunflower oil
- sea salt
- pepper
- apple slices (for garnish)
Instructions
- 1. Cut the chicken breast fillets into small cubes and season them generously with salt and pepper. Peel the apples, cut them into quarters, remove the core, and grate the flesh finely.
- 2. Heat the oil in a large pan and sear the chicken meat on high heat. Add the grated apples, ginger, chili peppers, turmeric, curry powder, and cumin, and fry everything together for 3 to 4 minutes.
- 3. Add a little water to the pan, deglaze by scraping the browned bits from the bottom, and stir in the yogurt. Bring the curry to a boil, season to taste with curry powder, salt, and pepper, and serve it garnished with apple slices over rice.
