🍰 Low-Carb Brownies

Ingredients
- 100 g soft butter (+ some for the pan)
- 60 ml maple syrup
- 1 tsp vanilla extract
- 4 eggs
- 200 g almond flour
- 3 tbsp cocoa powder (highly deoiled)
- 2 tsp baking powder
- 1 pinch salt
- 4 tbsp milk (3.5% fat)
- 100 g dark chocolate (min. 70% cocoa content)
- 200 g apricots
Instructions
- 1. Put the butter, maple syrup, vanilla extract, and eggs into a bowl.
- 2. Beat the mixture with a mixer or whisk until creamy and airy.
- 3. Take a second bowl and mix the almond flour, cocoa powder, baking powder, and salt.
- 4. Melt the dark chocolate using a double boiler or briefly in the microwave.
- 5. Stir the dry ingredients, wet ingredients, milk, and melted chocolate into a smooth batter.
- 6. Grease a baking pan and pour in the batter.
- 7. Wash the apricots and pat them dry.
- 8. Halve the apricots, remove the pits, and cut them into quarters.
- 9. Distribute the apricot pieces evenly over the batter.
- 10. Preheat the oven to 180 °C (160 °C with fan or gas mark 3).
- 11. Bake the brownies for 20 minutes in the preheated oven.
