  1. 1. Finely grate the zest of one whole lemon and squeeze out the juice.
  2. 2. Wash a handful of fresh parsley, shake it dry, and chop it finely.
  3. 3. Peel one clove of garlic and chop it very finely as well.
  4. 4. Rinse the fish fillets and pat them completely dry with a kitchen towel.
  5. 5. Season the fillets on both sides with salt and black pepper.
  6. 6. Heat some butter in a frying pan and place the fillets in with the skin side down.
  7. 7. Fry the fish over medium heat slowly for about five minutes until the skin is crispy.
  8. 8. Mix the lemon zest, chopped parsley, and garlic in a small bowl.
  9. 9. Spread this herb mixture evenly over the fish fillets.
  10. 10. Drizzle the fish with the freshly squeezed lemon juice.
  11. 11. Remove the pan from the heat, cover it, and let the fish rest for another one to two minutes.
  12. 12. Carefully skin the fish and cut it into bite-sized pieces.
  13. 13. Arrange the fish pieces on plates.
  14. 14. Pour the remaining sauce residues from the pan over the fish.
  15. 15. Serve the dish with fresh arugula salad as desired.
