🍽️ Sea Bass with Fresh Lemon-Parsley Gremolata

Ingredients
- 1 untreated lemon
- 1 handful parsley
- 2 garlic cloves
- 4 sea bass fillets (approx. 140 g each)
- salt
- pepper (from the mill)
- 2 tbsp butter
Instructions
- 1. Finely grate the zest of one whole lemon and squeeze out the juice.
- 2. Wash a handful of fresh parsley, shake it dry, and chop it finely.
- 3. Peel one clove of garlic and chop it very finely as well.
- 4. Rinse the fish fillets and pat them completely dry with a kitchen towel.
- 5. Season the fillets on both sides with salt and black pepper.
- 6. Heat some butter in a frying pan and place the fillets in with the skin side down.
- 7. Fry the fish over medium heat slowly for about five minutes until the skin is crispy.
- 8. Mix the lemon zest, chopped parsley, and garlic in a small bowl.
- 9. Spread this herb mixture evenly over the fish fillets.
- 10. Drizzle the fish with the freshly squeezed lemon juice.
- 11. Remove the pan from the heat, cover it, and let the fish rest for another one to two minutes.
- 12. Carefully skin the fish and cut it into bite-sized pieces.
- 13. Arrange the fish pieces on plates.
- 14. Pour the remaining sauce residues from the pan over the fish.
- 15. Serve the dish with fresh arugula salad as desired.
