🍽️ Fresh Lollo Bianco Salad with Smoked Salmon, Grapes, and Egg

Ingredients
- 1 Lollo bionda
- 2 eggs
- 2 oranges
- 200 g seedless grapes
- 2 tomatoes
- 250 g smoked salmon
- 2 tbsp apple cider vinegar
- 1 tbsp coarse mustard
- 1 tsp honey
- 1 tbsp freshly chopped parsley
- 4 tbsp grape seed oil
- pepper (from the mill)
- salt
Instructions
- 1. Rinse the Lollo Bianco lettuce heads under running water.
- 2. Remove any damaged or wilted leaves.
- 3. Dry the salad thoroughly using a kitchen towel or a salad spinner.
- 4. Tear the leaves into bite-sized pieces.
- 5. Boil the eggs in a pot of water until hard-boiled.
- 6. Remove the eggs from the boiling water and place them immediately into cold water to stop the cooking process.
- 7. Peel the cooled eggs.
- 8. Cut the eggs into four equal quarters.
- 9. Segment the oranges carefully so that only the fruit flesh remains.
- 10. Catch the dripping orange juice in a small bowl.
- 11. Wash the grapes thoroughly.
- 12. Cut the grapes in half lengthwise.
- 13. Remove the seeds from the halved grapes.
- 14. Wash the tomatoes.
- 15. Cut out the hard stem area at the top of the tomatoes.
- 16. Cut the tomatoes into wedge-shaped slices.
- 17. Arrange the torn lettuce leaves decoratively on the plates.
- 18. Place the orange segments, grape halves, and tomato wedges on the salad.
- 19. Distribute the egg quarters on the salad.
- 20. Place the smoked salmon rolls on top of the salad.
- 21. Pour the collected orange juice into a small bowl.
- 22. Add vinegar, mustard, honey, and finely chopped parsley to the bowl with the orange juice.
- 23. Add the oil.
- 24. Whisk all the dressing ingredients vigorously with a fork or a whisk.
- 25. Season the dressing with freshly ground pepper.
- 26. Add a pinch of salt.
- 27. Taste the dressing and adjust the seasoning if necessary.
- 28. Drizzle the finished dressing evenly over the plated salads.
- 29. Serve the salad immediately.
