  1. 1. Rinse the Lollo Bianco lettuce heads under running water.
  2. 2. Remove any damaged or wilted leaves.
  3. 3. Dry the salad thoroughly using a kitchen towel or a salad spinner.
  4. 4. Tear the leaves into bite-sized pieces.
  5. 5. Boil the eggs in a pot of water until hard-boiled.
  6. 6. Remove the eggs from the boiling water and place them immediately into cold water to stop the cooking process.
  7. 7. Peel the cooled eggs.
  8. 8. Cut the eggs into four equal quarters.
  9. 9. Segment the oranges carefully so that only the fruit flesh remains.
  10. 10. Catch the dripping orange juice in a small bowl.
  11. 11. Wash the grapes thoroughly.
  12. 12. Cut the grapes in half lengthwise.
  13. 13. Remove the seeds from the halved grapes.
  14. 14. Wash the tomatoes.
  15. 15. Cut out the hard stem area at the top of the tomatoes.
  16. 16. Cut the tomatoes into wedge-shaped slices.
  17. 17. Arrange the torn lettuce leaves decoratively on the plates.
  18. 18. Place the orange segments, grape halves, and tomato wedges on the salad.
  19. 19. Distribute the egg quarters on the salad.
  20. 20. Place the smoked salmon rolls on top of the salad.
  21. 21. Pour the collected orange juice into a small bowl.
  22. 22. Add vinegar, mustard, honey, and finely chopped parsley to the bowl with the orange juice.
  23. 23. Add the oil.
  24. 24. Whisk all the dressing ingredients vigorously with a fork or a whisk.
  25. 25. Season the dressing with freshly ground pepper.
  26. 26. Add a pinch of salt.
  27. 27. Taste the dressing and adjust the seasoning if necessary.
  28. 28. Drizzle the finished dressing evenly over the plated salads.
