🍽️ Fresh Dandelion and Strawberry Salad

Ingredients
- 150 g dandelion leaf (4 handfuls)
- 250 g strawberries
- 20 g beet sprouts (1 handful)
- 30 g pine nuts (2 tbsp)
- 2 tbsp olive oil
- 3 tbsp vegetable broth
- 2 tbsp balsamic vinegar
- 2 tsp agave syrup
- salt
- pepper
Instructions
- 1. Wash the dandelion leaves thoroughly.
- 2. Shake the leaves dry.
- 3. Cut the dandelion leaves in half if desired.
- 4. Remove the stems and green tops from the strawberries.
- 5. Wash the strawberries.
- 6. Cut the strawberries into quarters.
- 7. Wash the beet sprouts very thoroughly.
- 8. Shake the sprouts dry.
- 9. Put the pine nuts into a frying pan.
- 10. Toast the pine nuts without oil over medium heat.
- 11. Put the oil into a small bowl.
- 12. Add the broth.
- 13. Add the vinegar.
- 14. Add the agave syrup.
- 15. Add the salt.
- 16. Add the pepper.
- 17. Whisk all the dressing ingredients together well.
- 18. Put the dandelion leaves into a large bowl.
- 19. Add the strawberries.
- 20. Pour the dressing over the salad.
- 21. Toss the salad gently.
- 22. Sprinkle the beet sprouts over the salad.
- 23. Sprinkle the toasted pine nuts over the salad.
