  1. 1. Wash the soup vegetables thoroughly. Peel them only if they are dirty. Cut the vegetables into very small cubes.
  2. 2. Peel the potatoes. Wash them as well. Cut the potatoes into cubes of about one centimeter in size.
  3. 3. Rinse the lentils in a sieve under cold water.
  4. 4. Add the lentils, the diced vegetables, the potatoes, bay leaves, and thyme to the broth.
  5. 5. Bring the mixture to a boil.
  6. 6. Reduce the heat to medium. Let the soup simmer for about 40 minutes.
  7. 7. Peel the onion ten minutes before the end of the cooking time.
  8. 8. Cut the onion and the bacon into small cubes.
  9. 9. Heat ghee (clarified butter) in a frying pan.
  10. 10. Fry the onions and bacon slowly over low heat.
  11. 11. Dust the mixture with paprika powder.
  12. 12. Fry the seasoned mixture for a short while longer.
  13. 13. Add the bacon-onion mixture to the lentil soup.
  14. 14. Stir vinegar, mustard, and parsley into the soup.
  15. 15. Season the soup finally with salt and pepper to taste.
  16. 16. Serve the finished lentil soup on plates.
