🍽️ Hearty Lentil Soup with Bacon

Ingredients
- 1 bunch soup vegetables
- 200 g potatoes
- 275 g puy lentils
- 1 bay leaf
- 1 tsp dried thyme
- 1 l meat broth (or vegetable broth)
- 1 onion
- 100 g smoked streaky bacon
- 1 tbsp ghee
- paprika powder sweet
- 2 tbsp white wine vinegar
- 1 tsp medium-hot mustard
- 3 tbsp chopped parsley
- salt
- pepper
Instructions
- 1. Wash the soup vegetables thoroughly. Peel them only if they are dirty. Cut the vegetables into very small cubes.
- 2. Peel the potatoes. Wash them as well. Cut the potatoes into cubes of about one centimeter in size.
- 3. Rinse the lentils in a sieve under cold water.
- 4. Add the lentils, the diced vegetables, the potatoes, bay leaves, and thyme to the broth.
- 5. Bring the mixture to a boil.
- 6. Reduce the heat to medium. Let the soup simmer for about 40 minutes.
- 7. Peel the onion ten minutes before the end of the cooking time.
- 8. Cut the onion and the bacon into small cubes.
- 9. Heat ghee (clarified butter) in a frying pan.
- 10. Fry the onions and bacon slowly over low heat.
- 11. Dust the mixture with paprika powder.
- 12. Fry the seasoned mixture for a short while longer.
- 13. Add the bacon-onion mixture to the lentil soup.
- 14. Stir vinegar, mustard, and parsley into the soup.
- 15. Season the soup finally with salt and pepper to taste.
- 16. Serve the finished lentil soup on plates.
