🍽️ Lentil Salad with Mustard Dressing

Ingredients
- 225 g Puy lentils
- 2 celery stalks (in thin rings)
- 1 handful cherry tomatoes (in cubes)
- 150 g crumbled feta
- 1 handful fresh chopped mint
- 4 tbsp olive or rapeseed oil
- 1 tsp white wine vinegar
- 2 tsp Dijon mustard
- 1 finely chopped shallot
- salt, pepper
Instructions
- 1. Put the lentils into a pot.
- 2. Pour in enough water to just cover the lentils.
- 3. Cook the lentils for 20 minutes over low heat.
- 4. Drain the cooked lentils.
- 5. Add the lentils, celery, tomatoes, and feta to a large salad bowl.
- 6. Whisk all the dressing ingredients together in a small bowl.
- 7. Season the dressing with salt and pepper to taste.
- 8. Pour the dressing over the salad.
- 9. Garnish the salad with fresh mint.
