🍽️ Lentil salad with grated carrots

Ingredients
- 800 g lentils (pre-cooked)
- 1 carrot
- 2 bunch basil
- 0.5 lemon (squeezed)
- salt
- pepper
- 6 tbsp olive oil
- 6 tbsp vegetable broth
- 100 g parmesan (shaved)
Instructions
- 1. Peel the carrots and grate them finely.
- 2. Pick the basil leaves off the stems.
- 3. Warm the lentils with the broth, mix in lemon juice, salt, pepper and oil, and let the mixture cool down.
- 4. Mix everything with the carrots and basil, fill the salad into jars, sprinkle with Parmesan and serve.
