🍽️ Spicy Lentil Vegetable Mix

Ingredients
- 150 g yellow mung beans (peeled, halved)
- 150 g red lentils
- 1 tsp turmeric
- 0.5 tsp cumin
- 800 ml vegetable broth
- 600 g tomatoes
- 1 tbsp finely chopped parsley
- salt
- pepper (from the mill)
Instructions
- 1. Put the mung beans and lentils into a small pot.
- 2. Pour the vegetable broth over them.
- 3. Sprinkle in the turmeric powder and cumin powder.
- 4. Let the mixture simmer on low heat for about 30 minutes.
- 5. Check the consistency and add a little more water if necessary.
- 6. Pour boiling water over the tomatoes briefly.
- 7. Shock the tomatoes in cold water to loosen the skin.
- 8. Peel the tomatoes and cut them into eighths.
- 9. Remove the seeds from the tomato pieces.
- 10. Mash the cooked beans and lentils slightly with a fork.
- 11. Fold the prepared tomatoes into the lentil mixture.
- 12. Let everything simmer for a few more minutes.
- 13. Stir the chopped parsley into the dish.
- 14. Season the vegetables to taste with salt and pepper.
