🥗 Lentil Patties with Salad and Quark Dip

Ingredients
- 150 g red lentils
- 1 clove garlic
- 1 egg
- 30 g spelt wholemeal flour (3 tbsp)
- 60 g fine oat flakes (4 tbsp)
- salt
- pepper
- 0.5 tsp herbs of Provence
- 1 pinch cayenne pepper
- 2 tbsp olive oil
- 150 g low-fat quark (or skyr)
- 125 g arugula
- 125 g tomatoes
Instructions
- 1. Put the lentils in a pot and cover them with twice as much water as lentils.
- 2. Cook the lentils for 12 to 15 minutes until they are tender but still firm.
- 3. Drain the water and let the lentils cool down.
- 4. Peel the garlic clove and chop it finely.
- 5. Put the cooled lentils into a bowl.
- 6. Add the chopped garlic, the egg, the flour, and the oat flakes.
- 7. Season the mixture with salt, pepper, herbs, and cayenne pepper.
- 8. Shape 6 to 8 round patties from the mixture.
- 9. Heat oil in a pan.
- 10. Fry the patties for about 5 minutes on each side until golden brown.
- 11. Stir the quark in a small bowl with 2 to 3 tablespoons of water until smooth.
- 12. Season the quark dip with salt, pepper, and cayenne pepper.
- 13. Wash the arugula and shake it dry.
- 14. Wash the tomatoes and cut them into small pieces.
- 15. Serve the patties with the quark dip, the arugula, and the tomatoes.
