  1. 1. Put the lentils in a pot and cover them with twice as much water as lentils.
  2. 2. Cook the lentils for 12 to 15 minutes until they are tender but still firm.
  3. 3. Drain the water and let the lentils cool down.
  4. 4. Peel the garlic clove and chop it finely.
  5. 5. Put the cooled lentils into a bowl.
  6. 6. Add the chopped garlic, the egg, the flour, and the oat flakes.
  7. 7. Season the mixture with salt, pepper, herbs, and cayenne pepper.
  8. 8. Shape 6 to 8 round patties from the mixture.
  9. 9. Heat oil in a pan.
  10. 10. Fry the patties for about 5 minutes on each side until golden brown.
  11. 11. Stir the quark in a small bowl with 2 to 3 tablespoons of water until smooth.
  12. 12. Season the quark dip with salt, pepper, and cayenne pepper.
  13. 13. Wash the arugula and shake it dry.
  14. 14. Wash the tomatoes and cut them into small pieces.
  15. 15. Serve the patties with the quark dip, the arugula, and the tomatoes.
