  1. 1. Place the lentils in a bowl and cover them with plenty of water. Let them soak overnight.
  2. 2. Rinse the soaked lentils and let them drain well.
  3. 3. Wash the parsley, shake it dry, and pick off the leaves.
  4. 4. Peel the celery, carrots, potatoes, and onions.
  5. 5. Cut the peeled vegetables into small cubes.
  6. 6. Bring about 700 milliliters of water to a boil in a pot.
  7. 7. Add the cubed vegetables, the drained lentils, and the bay leaves to the boiling water.
  8. 8. Simmer the mixture covered on low heat for about 30 minutes.
  9. 9. Stir occasionally and add a little water if necessary.
  10. 10. Melt butter in a small saucepan.
  11. 11. Add flour and lightly brown it while stirring.
  12. 12. Take some cooking water from the lentils.
  13. 13. Stir the removed water into the flour mixture gradually.
  14. 14. Add the mixture to the lentil soup.
  15. 15. Simmer everything uncovered on low heat for about 10 minutes until the soup thickens slightly.
  16. 16. Season the lentil soup with salt, pepper, and vinegar.
  17. 17. Add the sausages and heat them in the soup for about 5 minutes.
  18. 18. Serve the stew garnished with the parsley leaves.
