🍽️ Hearty Lentil Soup with Sausages

Ingredients
- 300 g brown lentils
- 200 g celeriac
- 3 carrots
- 3 waxy potatoes
- 1 onion
- 2 bay leaves
- 15 g butter
- 2 tbsp flour
- salt
- pepper (from the mill)
- 2 tbsp wine vinegar
- 240 g sausages (4 sausages; sliced)
- parsley (for garnish)
Instructions
- 1. Place the lentils in a bowl and cover them with plenty of water. Let them soak overnight.
- 2. Rinse the soaked lentils and let them drain well.
- 3. Wash the parsley, shake it dry, and pick off the leaves.
- 4. Peel the celery, carrots, potatoes, and onions.
- 5. Cut the peeled vegetables into small cubes.
- 6. Bring about 700 milliliters of water to a boil in a pot.
- 7. Add the cubed vegetables, the drained lentils, and the bay leaves to the boiling water.
- 8. Simmer the mixture covered on low heat for about 30 minutes.
- 9. Stir occasionally and add a little water if necessary.
- 10. Melt butter in a small saucepan.
- 11. Add flour and lightly brown it while stirring.
- 12. Take some cooking water from the lentils.
- 13. Stir the removed water into the flour mixture gradually.
- 14. Add the mixture to the lentil soup.
- 15. Simmer everything uncovered on low heat for about 10 minutes until the soup thickens slightly.
- 16. Season the lentil soup with salt, pepper, and vinegar.
- 17. Add the sausages and heat them in the soup for about 5 minutes.
- 18. Serve the stew garnished with the parsley leaves.
