  1. 1. Rinse the lentils under cold water.
  2. 2. Place the lentils in a pot and cover them with 750 milliliters of water.
  3. 3. Bring the water to a boil over medium heat.
  4. 4. Reduce the heat, cover the pot, and let the lentils simmer for about 30 minutes.
  5. 5. Once the lentils are soft, turn off the stove.
  6. 6. Stir the bulgur (a fine wheat grain) into the hot mixture.
  7. 7. Let the pot stand covered for about 10 minutes to allow the bulgur to absorb the liquid.
  8. 8. Wash the spring onions and remove the tough ends.
  9. 9. Finely chop the white and light green parts of the spring onions.
  10. 10. Wash the parsley and shake it dry.
  11. 11. Finely chop the parsley.
  12. 12. Heat some oil in a frying pan.
  13. 13. Sauté the chopped spring onions over medium heat.
  14. 14. Add the tomato paste and let it cook briefly.
  15. 15. Remove the pan from the heat.
  16. 16. Stir the onion-tomato mixture into the bulgur-lentil mix.
  17. 17. Let the mixture cool down.
  18. 18. Add the chopped parsley.
  19. 19. Season the mixture with lemon juice, salt, pepper, and chili powder.
  20. 20. Shape the mixture into small balls.
  21. 21. Place the lentil balls on a plate.
  22. 22. Garnish them with lettuce leaves and lemon slices.
