🍽️ Crispy Lentil Balls

Ingredients
- 250 g finely grated bulgur
- 250 g red lentils
- 1 bunch spring onions
- 2 tbsp chopped parsley
- 1 tbsp tomato paste
- juice of one lemon
- 2 tbsp oil (20 ml)
- salt
- pepper
- hot chili powder (to taste)
- lettuce leaves (for garnish)
- lemon wedges (for garnish)
Instructions
- 1. Rinse the lentils under cold water.
- 2. Place the lentils in a pot and cover them with 750 milliliters of water.
- 3. Bring the water to a boil over medium heat.
- 4. Reduce the heat, cover the pot, and let the lentils simmer for about 30 minutes.
- 5. Once the lentils are soft, turn off the stove.
- 6. Stir the bulgur (a fine wheat grain) into the hot mixture.
- 7. Let the pot stand covered for about 10 minutes to allow the bulgur to absorb the liquid.
- 8. Wash the spring onions and remove the tough ends.
- 9. Finely chop the white and light green parts of the spring onions.
- 10. Wash the parsley and shake it dry.
- 11. Finely chop the parsley.
- 12. Heat some oil in a frying pan.
- 13. Sauté the chopped spring onions over medium heat.
- 14. Add the tomato paste and let it cook briefly.
- 15. Remove the pan from the heat.
- 16. Stir the onion-tomato mixture into the bulgur-lentil mix.
- 17. Let the mixture cool down.
- 18. Add the chopped parsley.
- 19. Season the mixture with lemon juice, salt, pepper, and chili powder.
- 20. Shape the mixture into small balls.
- 21. Place the lentil balls on a plate.
- 22. Garnish them with lettuce leaves and lemon slices.
