🍲 Hearty Lentil and Savoy Cabbage Soup with Papaya Topping

Ingredients
- 200 g brown lentils (or brown split lentils)
- 300 g Savoy cabbage
- 2 onions
- 3 tbsp oil
- 1 l vegetable broth (instant)
- 1 lime
- 1 small papaya
- salt
- pepper
- chili powder
Instructions
- 1. Rinse the lentils under cold water.
- 2. Place the lentils in a pot.
- 3. Cover the lentils with fresh water.
- 4. Simmer the lentils over medium heat for about 30 to 35 minutes until tender.
- 5. Remove the tough stems from the Savoy cabbage.
- 6. Chop the Savoy cabbage leaves finely.
- 7. Rinse the chopped cabbage under running water.
- 8. Peel the onions.
- 9. Dice the onions into small cubes.
- 10. Heat 2 tablespoons of oil in a pot.
- 11. Fry the onion cubes until golden yellow.
- 12. Add the cabbage to the pot.
- 13. Let the cabbage sweat for a short time.
- 14. Pour the broth into the pot.
- 15. Cover the pot.
- 16. Let the soup simmer for about 30 minutes.
- 17. Finely grate the lime zest.
- 18. Squeeze out the lime juice.
- 19. Cut the papaya in half.
- 20. Scoop out the seeds from the papaya.
- 21. Peel the papaya.
- 22. Dice the papaya flesh.
- 23. Heat the remaining oil in a non-stick pan.
- 24. Sauté the papaya cubes for about 1 to 2 minutes.
- 25. Add the lime zest to the pan.
- 26. Drizzle some lime juice over the papaya.
- 27. Season the papaya with salt.
- 28. Season the papaya with pepper.
- 29. Season the papaya with chili powder.
- 30. Drain the cooked lentils.
- 31. Add the lentils to the cabbage soup.
- 32. Add the sautéed papaya to the soup.
- 33. Let the mixture simmer together for about 2 to 3 minutes.
- 34. Adjust the seasoning with salt.
- 35. Adjust the seasoning with pepper.
- 36. Adjust the seasoning with a splash of lime juice.
