  2. 2. Let the lentils soak for 12 hours.
  3. 3. Pour off the soaking water and pour the lentils into a colander.
  4. 4. Rinse the lentils under running water.
  5. 5. Let the lentils drain well in the colander.
  6. 6. Peel the carrot under running water.
  7. 7. Cut the carrot into very small cubes.
  8. 8. Wash the celery thoroughly.
  9. 9. Remove tough stems or leaves from the celery.
  10. 10. Slice the celery into thin rounds.
  11. 11. Wash the leek thoroughly.
  12. 12. Remove the green tops and the root end from the leek.
  13. 13. Cut the leek into thin rings.
  14. 14. Peel the garlic cloves.
  15. 15. Mince the garlic very finely.
  16. 16. Slice the sausages into thick rounds.
  17. 17. Heat oil in a large pot.
  18. 18. Fry the sausage slices in the hot oil.
  19. 19. Add the lentils, carrots, celery, leek, and garlic to the pot.
  20. 20. Sauté the vegetables for 1 to 2 minutes.
  21. 21. Stir the paprika powder into the mixture.
  22. 22. Pour cold water into the pot until everything is covered.
  23. 23. Add the bay leaf to the soup.
  24. 24. Bring the stew to a boil.
  25. 25. Reduce the heat to medium.
  26. 26. Let the stew simmer gently for about 40 minutes.
  27. 27. Season the stew with salt to taste.
