🍲 Hearty Lentil and Celery Stew with Sausage

Ingredients
- 250 g lentils
- 1 carrot
- 2 stalks celery
- 1 stalk leek
- 1 clove of garlic
- 4 frying sausages (ca. 400 g)
- 2 tbsp sunflower oil
- 1 tsp paprika powder (mild)
- 1 bay leaf
- salt
- cayenne pepper
Instructions
- 1. Place the lentils in a bowl and cover them with cold water.
- 2. Let the lentils soak for 12 hours.
- 3. Pour off the soaking water and pour the lentils into a colander.
- 4. Rinse the lentils under running water.
- 5. Let the lentils drain well in the colander.
- 6. Peel the carrot under running water.
- 7. Cut the carrot into very small cubes.
- 8. Wash the celery thoroughly.
- 9. Remove tough stems or leaves from the celery.
- 10. Slice the celery into thin rounds.
- 11. Wash the leek thoroughly.
- 12. Remove the green tops and the root end from the leek.
- 13. Cut the leek into thin rings.
- 14. Peel the garlic cloves.
- 15. Mince the garlic very finely.
- 16. Slice the sausages into thick rounds.
- 17. Heat oil in a large pot.
- 18. Fry the sausage slices in the hot oil.
- 19. Add the lentils, carrots, celery, leek, and garlic to the pot.
- 20. Sauté the vegetables for 1 to 2 minutes.
- 21. Stir the paprika powder into the mixture.
- 22. Pour cold water into the pot until everything is covered.
- 23. Add the bay leaf to the soup.
- 24. Bring the stew to a boil.
- 25. Reduce the heat to medium.
- 26. Let the stew simmer gently for about 40 minutes.
- 27. Season the stew with salt to taste.
- 28. Season the stew with cayenne pepper to taste.
- 29. Serve the stew hot.
