  1. 1. Rinse the lentils under cold water and let them drain well.
  2. 2. Peel the onion and the garlic clove and chop both very finely.
  3. 3. Heat the oil in a large pot.
  4. 4. Sauté the onions and garlic in it for 2 to 3 minutes over medium heat.
  5. 5. Add the turmeric and the lentils and continue to sauté everything for 2 minutes.
  6. 6. Pour the apple juice and the vegetable broth into the pot.
  7. 7. Season the soup with salt and add the bay leaf.
  8. 8. Let the soup simmer covered over medium heat for about 30 minutes.
  9. 9. Meanwhile, peel the carrots and slice them.
  10. 10. Clean the celery, remove any stringy fibers if necessary, wash it, and also slice it.
  11. 11. Add the carrots and celery to the soup after 30 minutes of cooking time.
  12. 12. Let everything cook for another 15 minutes.
  13. 13. Grate the lemon zest into the soup and squeeze in the lemon juice.
  14. 14. Finally, season the soup to taste with salt and pepper.
  15. 15. Fill the hot soup into bowls and enjoy it immediately.
