🍲 Warm Lentil Vegetable Soup

Ingredients
- 250 g brown lentils
- 1 onion
- 2 garlic cloves
- 1 tbsp olive oil
- 2 tsp turmeric powder
- 100 ml apple juice
- 1.5 l vegetable broth
- salt
- 1 bay leaf
- 400 g carrots (4 carrots)
- 140 g celery stalks (2 stalks)
- 0.5 organic lemon (zest and juice)
Instructions
- 1. Rinse the lentils under cold water and let them drain well.
- 2. Peel the onion and the garlic clove and chop both very finely.
- 3. Heat the oil in a large pot.
- 4. Sauté the onions and garlic in it for 2 to 3 minutes over medium heat.
- 5. Add the turmeric and the lentils and continue to sauté everything for 2 minutes.
- 6. Pour the apple juice and the vegetable broth into the pot.
- 7. Season the soup with salt and add the bay leaf.
- 8. Let the soup simmer covered over medium heat for about 30 minutes.
- 9. Meanwhile, peel the carrots and slice them.
- 10. Clean the celery, remove any stringy fibers if necessary, wash it, and also slice it.
- 11. Add the carrots and celery to the soup after 30 minutes of cooking time.
- 12. Let everything cook for another 15 minutes.
- 13. Grate the lemon zest into the soup and squeeze in the lemon juice.
- 14. Finally, season the soup to taste with salt and pepper.
- 15. Fill the hot soup into bowls and enjoy it immediately.
