  1. 1. Rinse red lentils under cold water.
  2. 2. Place the lentils in a pot and cover with double the amount of water.
  3. 3. Bring the water to a boil.
  4. 4. Cook the lentils on low to medium heat for 15 minutes.
  5. 5. Drain the lentils and let them drain well.
  6. 6. Peel one onion and one clove of garlic.
  7. 7. Finely chop the onion and garlic.
  8. 8. Wash fresh coriander leaves and shake them dry.
  9. 9. Set aside a handful of coriander leaves for garnish.
  10. 10. Chop the remaining coriander.
  11. 11. Heat one tablespoon of oil in a pan.
  12. 12. Sauté the chopped onion and half of the garlic on medium heat for 2 to 3 minutes.
  13. 13. Let the onion mixture cool down slightly.
  14. 14. Add the drained lentils, flour, tomato paste, and chopped coriander to the onion mixture.
  15. 15. Work the ingredients into a homogeneous mixture.
  16. 16. Season the mixture with salt, pepper, and cumin.
  17. 17. Place the mixture covered in the refrigerator for approx. 10 minutes.
  18. 18. Wash a lime with hot water and dry it.
  19. 19. Halve the lime lengthwise.
  20. 20. Squeeze the juice from half a lime.
  21. 21. Cut the other half of the lime into wedges.
  22. 22. Mix yogurt with the lime juice, remaining garlic, and sumac.
  23. 23. Season the yogurt sauce with salt and pepper.
  24. 24. Form 20 balls from the chilled lentil mixture.
  25. 25. Heat the remaining oil in a large pan.
  26. 26. Fry the falafel balls on medium heat for approx. 15 to 20 minutes until golden brown.
  27. 27. Turn the falafel regularly while frying.
  28. 28. Spread the yogurt sauce on four plates.
  29. 29. Place the finished falafel on the sauce.
  30. 30. Garnish the falafel with the reserved coriander leaves and lime wedges.
  31. 31. Serve the dish immediately.
