  1. 1. Peel the shallots and the garlic.
  2. 2. Dice the vegetables into very small cubes.
  3. 3. Heat one tablespoon of oil in a pot.
  4. 4. Sauté the vegetables over medium heat until translucent.
  5. 5. Add the lentils to the pot.
  6. 6. Deglaze everything with the broth.
  7. 7. Cook the mixture on low heat for about 8 to 10 minutes until tender.
  8. 8. Add more broth if necessary.
  9. 9. Clean the mushrooms meanwhile.
  10. 10. Slice the mushrooms.
  11. 11. Slice the cheese as well.
  12. 12. Wash the chives.
  13. 13. Shake off excess water from the chives.
  14. 14. Cut the chives into small rings.
  15. 15. Season the lentils with salt and pepper.
  16. 16. Add a splash of lemon juice.
  17. 17. Add a pinch of cumin.
  18. 18. Fold in the mushrooms into the lentils.
  19. 19. Cook the mixture for another 2 minutes.
  20. 20. Divide the lentil mixture among 4 deep plates.
  21. 21. Top with the cheese slices.
  22. 22. Sprinkle with the chives.
  23. 23. Drizzle with the remaining olive oil.
