🍽️ Lentil-Mushroom Bowl with Goat Cheese

Ingredients
- 2 shallots
- 1 garlic clove
- 4 tbsp olive oil
- 300 g yellow lentils
- 600 ml vegetable broth
- 150 g button mushrooms
- 150 g goat feta
- 20 g chives (1 bunch)
- salt
- pepper
- 1 dash lemon juice
- ground cumin
Instructions
- 1. Peel the shallots and the garlic.
- 2. Dice the vegetables into very small cubes.
- 3. Heat one tablespoon of oil in a pot.
- 4. Sauté the vegetables over medium heat until translucent.
- 5. Add the lentils to the pot.
- 6. Deglaze everything with the broth.
- 7. Cook the mixture on low heat for about 8 to 10 minutes until tender.
- 8. Add more broth if necessary.
- 9. Clean the mushrooms meanwhile.
- 10. Slice the mushrooms.
- 11. Slice the cheese as well.
- 12. Wash the chives.
- 13. Shake off excess water from the chives.
- 14. Cut the chives into small rings.
- 15. Season the lentils with salt and pepper.
- 16. Add a splash of lemon juice.
- 17. Add a pinch of cumin.
- 18. Fold in the mushrooms into the lentils.
- 19. Cook the mixture for another 2 minutes.
- 20. Divide the lentil mixture among 4 deep plates.
- 21. Top with the cheese slices.
- 22. Sprinkle with the chives.
- 23. Drizzle with the remaining olive oil.
