🍽️ Spiced Lentil Bulgur Mix

Ingredients
- 2 tbsp olive oil
- 1 tsp cumin
- 2 tsp coriander seeds
- 2 cardamom pods
- 50 g red lentils
- 225 ml classic vegetable broth
- 100 g bulgur
- 20 g pistachio kernels
Instructions
- 1. Heat the oil in a pot.
- 2. Add cumin, coriander seeds, and cardamom.
- 3. Sauté the spices over medium heat for one minute.
- 4. Add the lentils to the pot.
- 5. Sauté the lentils with the spices for another minute while stirring.
- 6. Pour the vegetable broth into the pot.
- 7. Bring the mixture to a boil.
- 8. Let the mixture boil for one minute.
- 9. Sprinkle the bulgur into the liquid.
- 10. Bring the mixture to a boil again.
- 11. Turn off the heat.
- 12. Cover the pot.
- 13. Let the bulgur swell for 25 minutes.
- 14. Chop the pistachio kernels in the meantime.
- 15. Lightly toast the pistachios in a pan without fat.
- 16. Fluff the lentil bulgur with a fork.
- 17. Transfer the mixture to a bowl.
- 18. Sprinkle the dish with the toasted pistachios.
- 19. Serve the lentil bulgur.
