🥗 Linen-Pear Salad with Arugula

Ingredients
- 100 g yellow lentils
- 250 g arugula
- 1 red onion
- 1 pear
- 100 ml kefir
- 2 tbsp olive oil
- salt
- cayenne pepper
Instructions
- 1. Pour the vegetable broth into a pot and bring it to a boil.
- 2. Add the lentils to the boiling broth.
- 3. Let the lentils simmer gently for about 10 minutes.
- 4. Drain the cooked lentils in a colander.
- 5. Let the lentils cool down completely.
- 6. Thoroughly wash the arugula in cold water.
- 7. Remove any tough stems or wilted leaves from the arugula.
- 8. Peel the onion.
- 9. Slice the onion into thin rings.
- 10. Cut the pear into quarters.
- 11. Remove the core from the pear pieces.
- 12. Cut the pear pieces into thin wedges.
- 13. Mix the onion rings and pear wedges together loosely.
- 14. Distribute the onion and pear mixture onto your plates.
- 15. Pour the kefir into a small bowl.
- 16. Add the oil to the kefir.
- 17. Whisk the kefir and oil together well.
- 18. Season the sauce with salt.
- 19. Season the sauce with cayenne pepper.
- 20. Pour the finished sauce over the salad.
- 21. Serve the salad immediately.
