🍽️ Linguine with fresh spinach, feta, and radishes

Ingredients
- 400 g whole wheat pasta (linguine)
- salt
- 100 g baby spinach
- 200 g radishes (with greens)
- 2 spring onions
- 0.5 organic lemon
- 2 tbsp olive oil
- pepper
- 100 g feta
Instructions
- 1. Boil a large pot of water and add plenty of salt.
- 2. Add the linguine to the boiling water.
- 3. Cook the pasta until it is al dente, following the instructions on the package.
- 4. Remove the stems from the spinach.
- 5. Wash the spinach thoroughly.
- 6. Shake the spinach dry.
- 7. Trim the hard ends off the radishes.
- 8. Wash the radishes.
- 9. Cut the radishes into quarters.
- 10. Wash the green leafy tops of the radishes.
- 11. Shake the radish greens dry.
- 12. Finely chop the radish greens.
- 13. Trim the hard ends off the spring onions.
- 14. Wash the spring onions.
- 15. Slice the spring onions into thin rounds.
- 16. Rinse half of the lemon under hot water.
- 17. Dry the rinsed half of the lemon.
- 18. Grate the zest of the lemon half finely.
- 19. Squeeze the juice from the lemon half.
- 20. Place the prepared vegetables and chopped radish greens into a bowl.
- 21. Add olive oil.
- 22. Add the lemon juice.
- 23. Add the lemon zest.
- 24. Mix everything well together.
- 25. Season the mixture with salt.
- 26. Season the mixture with pepper.
- 27. Drain the pasta.
- 28. Let the pasta drain well.
- 29. Divide the pasta among plates.
- 30. Divide the seasoned vegetables among the plates.
- 31. Crumble the feta into small pieces.
- 32. Place the feta over the pasta.
- 33. Sprinkle some pepper over the finished dish.
