🍽️ Crispy Chicken with Lemon-Raisin Glaze

Ingredients
- 2 chicken drumsticks (skinless)
- 100 g pistachios (chopped)
- 1 shallot (finely chopped)
- 3 tbsp olive oil
- salt
- pepper
- 2 carrots
- 2 tbsp raisins
- 1 lemon (juiced)
- 1 lemon halved (for garnish)
- 1 tbsp honey
- 2 tbsp parsley (chopped)

Instructions
- 1. Pour the lemon juice over the raisins and let them soak.
- 2. Heat two tablespoons of olive oil in a pan.
- 3. Fry the chicken drumsticks in the hot oil until golden brown on all sides.
- 4. Finely chop the shallot and mix it with the pine nuts, salt, pepper, and one tablespoon of olive oil to form a paste.
- 5. Coat the fried chicken drumsticks evenly with the shallot paste.
- 6. Place the chicken drumsticks in a baking dish.
- 7. Preheat the oven to 160 degrees Celsius and place the dish on the middle rack.
- 8. Bake the chicken for about 30 minutes using top and bottom heat.
- 9. Peel the carrots and cut them into thin sticks.
- 10. Mix the carrot sticks with the drained raisins, the honey, and the chopped parsley.
- 11. Season the carrot mixture with a pinch of salt.
- 12. Serve the chicken on plates together with the carrot mixture.
- 13. Garnish each plate with half a lemon slice.
