🍰 Strawberry Sorbet with Lime Syrup

Ingredients
- 500 g strawberries
- 3 unpeeled limes
- 20 ml lime syrup
- 0.5 bunch lemon balm
- sorbet
- 220 g sugar
- 3 unpeeled limes (including the grated zest and juice)
- 1 egg white

Instructions
- 1. Put the sugar into a pot.
- 2. Pour 600 milliliters of water into it.
- 3. Bring the mixture to a boil on the stove.
- 4. Stir continuously until the sugar is completely dissolved.
- 5. Add the lime zest to the liquid.
- 6. Let the syrup simmer gently for about 10 minutes.
- 7. Remove the pot from the heat.
- 8. Allow the syrup to cool down.
- 9. Stir the lemon juice into the cooled syrup.
- 10. Pour the mixture into a shallow metal bowl.
- 11. Place the bowl in the freezer for about 2 hours.
- 12. Wait until the mixture is half-frozen.
- 13. Whip the egg whites in a separate bowl until stiff.
- 14. Transfer the half-frozen sorbet mixture into a mixing bowl.
- 15. Add the whipped egg whites.
- 16. Mix everything thoroughly.
- 17. Place the bowl back in the freezer for 1 hour.
- 18. Wash the strawberries under running water.
- 19. Remove the green stems.
- 20. Slice the berries lengthwise into thin pieces.
- 21. Arrange the slices on four dessert plates.
- 22. Place them in an overlapping circular pattern.
- 23. Drizzle the finished syrup over the strawberries.
- 24. Scoop out balls from the frozen sorbet.
- 25. Place the sorbet balls on top of the arranged strawberries.
- 26. Garnish the dish with strips of lime zest.
- 27. Add fresh mint leaves as decoration.
- 28. Serve the dessert immediately.
