🍰 Zesty Lime Cake Squares

Ingredients
- 100 g Butter (room temperature)
- 2 Limes
- 500 g Yogurt (1.5% fat)
- 4 Eggs (M)
- 100 g Sugar
- 500 g Durum wheat semolina
- 1 packet Baking powder
- 1 Pomegranate
- 2 tsp liquid sweetener
Instructions
- 1. Melt the butter in a small saucepan.
- 2. Let the melted butter cool down.
- 3. Rinse the limes under hot water.
- 4. Dry the limes with a cloth.
- 5. Grate the lime zest finely over a bowl.
- 6. Set the limes aside.
- 7. Add the yogurt to the cooled butter.
- 8. Add the eggs to the mixture.
- 9. Add the sugar to the mixture.
- 10. Mix everything thoroughly with a hand mixer.
- 11. Put the semolina into a separate bowl.
- 12. Add the baking powder to the semolina.
- 13. Mix the semolina and baking powder well.
- 14. Stir the semolina mixture into the yogurt-egg mixture.
- 15. Continue stirring until a smooth batter forms.
- 16. Line the bottom of a square baking pan (24x24 cm) with baking paper.
- 17. Pour the batter into the prepared pan.
- 18. Smooth the surface of the batter with a rubber spatula.
- 19. Preheat the oven to 180 °C (fan: 160 °C, gas: setting 2-3).
- 20. Place the pan on the middle rack.
- 21. Bake the cake for 40 to 45 minutes.
- 22. Insert a wooden skewer into the center of the cake.
- 23. Check if the skewer comes out clean.
- 24. If the skewer is dirty, bake the cake for a few minutes longer.
- 25. Cut a wedge-shaped piece off the crown of the pomegranate.
- 26. Hold the pomegranate over a bowl.
- 27. Break the fruit apart with some pressure.
- 28. Remove the white membranes from the seeds.
- 29. Halve the limes.
- 30. Squeeze the juice from the lime halves.
- 31. Take the cake out of the oven.
- 32. Poke the cake several times with the wooden skewer.
- 33. Mix the lime juice with the sweetener.
- 34. Soak the cake with the lime-sweetener mixture.
- 35. Let the cake cool in the pan.
- 36. Cut the cake into 25 roughly equal squares.
- 37. Sprinkle the squares with the pomegranate seeds.
- 38. Serve the cake squares.
