🍽️ Fresh Lime Cookies

Ingredients
- 170 g Butter
- 200 g Sugar
- 2 Eggs
- 1 Lime (zested)
- 1 tbsp Lime juice
- 1 pinch Salt
- 270 g Flour
- 240 g Powdered sugar
- 3 tbsp Lime juice
- Food coloring
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan setting.
- 2. Beat butter, sugar, eggs, lime juice, and a pinch of salt with a mixer until creamy and fluffy.
- 3. Stir in half of the flour into the mixture.
- 4. Knead the remaining flour with your hands to form a smooth dough.
- 5. Place the dough in the refrigerator and let it chill for two hours.
- 6. Sprinkle some flour on a work surface and roll out the dough thinly.
- 7. Cut out circles with a diameter of about 3 to 4 centimeters using a round cookie cutter.
- 8. Place the cookies with some space between them on a baking sheet lined with baking paper.
- 9. Bake the cookies for 10 to 12 minutes in the preheated oven.
- 10. Whisk powdered sugar with a little lime juice to form a smooth glaze.
- 11. Color a portion of the glaze with green food coloring.
- 12. Coat the cooled cookies evenly with the green glaze.
- 13. Let the green layer dry completely.
- 14. Fill the remaining white glaze into a piping bag.
- 15. Decorate the cookies with patterns made from the white glaze.
- 16. Let the decoration dry completely as well before serving the cookies.
