🍽️ Refreshing Lime Granita with Ginger and Pomegranate

Ingredients
- 2 unpeeled limes
- 2 cm ginger
- 150 g sugar
- 40 ml peppermint liqueur (colorless)
- 1 pomegranate
- mineral water to pour over (optional still or sparkling)
Instructions
- 1. Wash the limes under hot water and pat them dry.
- 2. Finely grate the green zest of the limes.
- 3. Squeeze the juice from the limes.
- 4. Slice the ginger into thin rounds.
- 5. Add the sugar, 350 milliliters of water, the ginger slices, and the lime zest to a pot.
- 6. Bring the mixture to a boil on the stove.
- 7. Let the mixture simmer for about 5 minutes.
- 8. Remove the pot from the heat.
- 9. Pour the liquid through a fine mesh sieve to remove the ginger and zest.
- 10. Let the syrup mixture cool down.
- 11. Stir the lime juice and liqueur into the cooled syrup.
- 12. Pour the mixture into a metal container.
- 13. Place the container in the freezer.
- 14. Freeze the granita for at least 4 hours.
- 15. Stir the mixture vigorously with a fork every 20 minutes during the first 3 hours.
- 16. Press around the pomegranate to loosen the seeds.
- 17. Cut the pomegranate in half.
- 18. Tap the seeds out of the skin.
- 19. Stir the granita again once it is frozen with fine crystals.
- 20. Fold the pomegranate seeds into the granita.
- 21. Fill the granita into glasses.
- 22. Pour a splash of mineral water into each glass.
- 23. Serve the dessert immediately.
