🍽️ Refreshing Lime Ice Cream

Ingredients
- 1 untreated lime (Zested Rind)
- 5 limes
- 80 g sugar
- 80 ml white wine
- 1 egg white
- 100 g double cream
- strawberries
- sugar
- lime zest
- lemon balm
Instructions
- 1. Place sugar and wine in a saucepan.
- 2. Heat the mixture while stirring constantly until it boils.
- 3. Remove the pan from the heat.
- 4. Add the grated lime zest.
- 5. Let the liquid cool down.
- 6. Squeeze all the limes to extract the juice.
- 7. Beat the egg whites until they are semi-stiff, meaning they are slightly firm.
- 8. Lightly whip the double cream (a high-fat cream) until it becomes creamy.
- 9. Add the lime juice to the cooled wine mixture.
- 10. Stir everything well.
- 11. Gently fold in the whipped double cream.
- 12. Gently fold in the egg whites.
- 13. Pour the mixture into a shallow metal bowl.
- 14. Freeze the bowl in the freezer for about 4 hours.
- 15. Stir the ice cream repeatedly in between to ensure a creamy texture.
- 16. Serve the ice cream, for example, with sugared strawberries.
- 17. Garnish it with fine strips of lime zest.
- 18. Garnish it with fresh lemon balm leaves.
