  4. 4. Add the grated lime zest.
  5. 5. Let the liquid cool down.
  6. 6. Squeeze all the limes to extract the juice.
  7. 7. Beat the egg whites until they are semi-stiff, meaning they are slightly firm.
  8. 8. Lightly whip the double cream (a high-fat cream) until it becomes creamy.
  9. 9. Add the lime juice to the cooled wine mixture.
  10. 10. Stir everything well.
  11. 11. Gently fold in the whipped double cream.
  12. 12. Gently fold in the egg whites.
  13. 13. Pour the mixture into a shallow metal bowl.
  14. 14. Freeze the bowl in the freezer for about 4 hours.
  15. 15. Stir the ice cream repeatedly in between to ensure a creamy texture.
  16. 16. Serve the ice cream, for example, with sugared strawberries.
  17. 17. Garnish it with fine strips of lime zest.
  18. 18. Garnish it with fresh lemon balm leaves.
