🍽️ Lime Ice with Oranges

Ingredients
- 250 g Sugar
- 4 Limes (juice)
- 400 ml Champagne
- 2 Egg whites
- 3 tbsp Powdered sugar
- Lime zest (and segments)
- Orange segments
Instructions
- 1. Stir sugar and 300 milliliters of water in a pot.
- 2. Boil the syrup until it becomes thick.
- 3. Remove the pot from the heat.
- 4. Stir in lime juice and champagne into the warm mixture.
- 5. Let the liquid cool down completely.
- 6. Pour the cooled liquid into a shallow metal bowl.
- 7. Place the bowl in the freezer.
- 8. Stir the mixture with a whisk after about one hour.
- 9. Place the bowl back in the freezer.
- 10. Repeat stirring until the mixture starts to set.
- 11. Whip egg whites with powdered sugar until stiff.
- 12. Gently fold the whipped egg whites into the frozen lime mixture.
- 13. Freeze the mixture again until it is completely frozen.
- 14. Alternatively, you can finish the mixture in an ice cream maker.
- 15. Scoop balls out of the finished ice cream using an ice cream scoop.
- 16. Arrange the ice balls on orange segments as desired.
- 17. Garnish the dish with lime zest and lime segments.
