  1. 1. Stir sugar and 300 milliliters of water in a pot.
  2. 2. Boil the syrup until it becomes thick.
  3. 3. Remove the pot from the heat.
  4. 4. Stir in lime juice and champagne into the warm mixture.
  5. 5. Let the liquid cool down completely.
  6. 6. Pour the cooled liquid into a shallow metal bowl.
  7. 7. Place the bowl in the freezer.
  8. 8. Stir the mixture with a whisk after about one hour.
  9. 9. Place the bowl back in the freezer.
  10. 10. Repeat stirring until the mixture starts to set.
  11. 11. Whip egg whites with powdered sugar until stiff.
  12. 12. Gently fold the whipped egg whites into the frozen lime mixture.
  13. 13. Freeze the mixture again until it is completely frozen.
  14. 14. Alternatively, you can finish the mixture in an ice cream maker.
  15. 15. Scoop balls out of the finished ice cream using an ice cream scoop.
  16. 16. Arrange the ice balls on orange segments as desired.
  17. 17. Garnish the dish with lime zest and lime segments.
