  1. 1. Finely grate the zest of two limes and squeeze out the juice.
  2. 2. Soak the gelatin in a bowl of cold water.
  3. 3. Separate the eggs by carefully separating the yolk from the white.
  4. 4. Heat half a cup of water in a pot.
  5. 5. Whisk the egg yolk with vanilla sugar in a heatproof pot.
  6. 6. Add the grated lime zest and lime juice to the egg yolk mixture.
  7. 7. Place the pot into the warm water bath.
  8. 8. Whisk the mixture with a whisk until it is frothy.
  9. 9. Remove the cream from the heat.
  10. 10. Squeeze the soaked gelatin well.
  11. 11. Dissolve the gelatin in the warm cream.
  12. 12. Stir the yogurt into the cream.
  13. 13. Place the cream in the refrigerator for 15 minutes.
  14. 14. Whip the egg white until very stiff.
  15. 15. Gently fold the whipped egg white into the cream.
  16. 16. Chill the cream for 2 hours.
  17. 17. Slice the remaining half of the lime into thin slices.
  18. 18. Cut small hearts out of the lime slices using a knife.
  19. 19. Decorate the dessert with the lime hearts and peppermint leaves.
