🍽️ Fresh Lime Cream Dessert

Ingredients
- 2.5 unpeeled limes
- 3 sheets white gelatin
- 1 egg
- 4 tbsp vanilla sugar
- 150 g yogurt with cream
- Peppermint (for garnishing)
Instructions
- 1. Finely grate the zest of two limes and squeeze out the juice.
- 2. Soak the gelatin in a bowl of cold water.
- 3. Separate the eggs by carefully separating the yolk from the white.
- 4. Heat half a cup of water in a pot.
- 5. Whisk the egg yolk with vanilla sugar in a heatproof pot.
- 6. Add the grated lime zest and lime juice to the egg yolk mixture.
- 7. Place the pot into the warm water bath.
- 8. Whisk the mixture with a whisk until it is frothy.
- 9. Remove the cream from the heat.
- 10. Squeeze the soaked gelatin well.
- 11. Dissolve the gelatin in the warm cream.
- 12. Stir the yogurt into the cream.
- 13. Place the cream in the refrigerator for 15 minutes.
- 14. Whip the egg white until very stiff.
- 15. Gently fold the whipped egg white into the cream.
- 16. Chill the cream for 2 hours.
- 17. Slice the remaining half of the lime into thin slices.
- 18. Cut small hearts out of the lime slices using a knife.
- 19. Decorate the dessert with the lime hearts and peppermint leaves.
