- 1 unpeeled lime
- 250 g soft butter

Instructions
- 1. Wash the lemon balm thoroughly, shake it dry, and chop it finely.
- 2. Wash the lime under hot water, grate the zest, and squeeze out 1 tablespoon of juice. Mix the butter thoroughly with the lime zest, juice, and lemon balm.
- 3. Season the butter with salt and pepper. Shape it into a roll, wrap it in aluminum foil, and place it in a cool spot.
