🍽️ Lime Coconut Cake Slices

Ingredients
- 2 unpeeled limes
- 100 ml orange juice
- 140 g soft butter
- 140 g sugar
- 2 eggs
- 180 g flour
- 2 tsp baking powder
- 2 unpeeled limes
- 3 bananas
- 4 egg yolks
- 400 ml sweetened condensed milk
- 7 egg whites
- 1 pinch salt
- 180 g sugar
- 3 tbsp coconut flakes
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Line the baking pan with baking paper.
- 3. Wash the limes under hot water.
- 4. Grate the lime zest finely.
- 5. Squeeze the juice from the limes.
- 6. Mix the lime juice with the orange juice.
- 7. Add the lime zest to the juice mixture.
- 8. Beat the butter until creamy and stiff peaks form.
- 9. Mix in the sugar.
- 10. Stir in the eggs one by one.
- 11. Combine the flour with the baking powder.
- 12. Alternately stir in the flour mixture and the orange juice.
- 13. Pour the batter into the pan.
- 14. Smooth out the batter.
- 15. Wash the limes for the topping.
- 16. Pat the limes dry.
- 17. Grate the zest of the limes again.
- 18. Squeeze the juice from the limes.
- 19. Peel the bananas.
- 20. Slice the bananas thinly.
- 21. Mix the banana slices with 1-2 tablespoons of lime juice.
- 22. Spread the bananas over the batter.
- 23. Whisk the remaining lime juice with the egg yolks.
- 24. Add the lime zest to the egg yolk mixture.
- 25. Stir in the condensed milk.
- 26. Pour this mixture over the top.
- 27. Bake the cake for about 35 minutes in the oven.
- 28. Beat the egg whites with the salt until stiff.
- 29. Gradually sprinkle in the sugar.
- 30. Continue until a firm, glossy meringue forms.
- 31. Gently fold in the coconut flakes.
- 32. Remove the cake from the oven.
- 33. Spread the meringue loosely in waves on top.
- 34. Return it to the oven for about 5 minutes.
- 35. Bake until the peaks are lightly golden brown.
- 36. Let the cake cool down.
- 37. Cut the cake into pieces.
- 38. Serve the cake slices.
