🍽️ Lime Potatoes with Pak Choi and Cucumber-Chili Salad

Ingredients
- 800 g young potatoes
- 2 organic limes
- 4 tbsp olive oil
- salt
- pepper
- 1 cucumber
- 1 green chili pepper
- 1 red onion
- 1 clove garlic
- 1 pinch raw cane sugar
- 4 small pak choi
- 200 g feta
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Cut the potatoes in half or quarters depending on their size.
- 3. Rinse the limes under hot water.
- 4. Dry the limes.
- 5. Finely grate the zest of the limes.
- 6. Squeeze the juice from the limes.
- 7. Set the lime zest aside.
- 8. Mix two tablespoons of olive oil with half of the lime juice.
- 9. Season the oil and juice mixture with salt and pepper.
- 10. Add the potatoes to the marinade.
- 11. Toss the potatoes well to ensure they are evenly coated.
- 12. Place the potatoes on four sheets of baking paper.
- 13. Fold the baking paper into small packets.
- 14. Twist the ends of the packets tightly.
- 15. Secure the packets with kitchen twine or small wooden skewers if necessary.
- 16. Preheat the oven to 200 degrees Celsius top and bottom heat.
- 17. Bake the potato packets in the preheated oven for about 25 minutes.
- 18. Wash the cucumber and chili under running water.
- 19. Pat the cucumber and chili dry.
- 20. Cut the cucumber in half lengthwise.
- 21. Scoop out the seeds of the cucumber with a spoon.
- 22. Slice the flesh of the cucumber into thin pieces.
- 23. Slice the chili into thin rings.
- 24. Peel the onion.
- 25. Halve the onion.
- 26. Slice the onion into thin rings.
- 27. Peel the garlic.
- 28. Chop the garlic finely.
- 29. Whisk the sugar with the remaining olive oil.
- 30. Add the remaining lime juice to the marinade.
- 31. Add the lime zest to the marinade.
- 32. Season the marinade with salt and pepper.
- 33. Add the cucumber pieces to the marinade.
- 34. Add the chili rings to the marinade.
- 35. Add the garlic to the marinade.
- 36. Add the onion rings to the marinade.
- 37. Let the mixture marinate for ten minutes.
- 38. Wash the Pak Choi under running water.
- 39. Remove any damaged leaves from the Pak Choi.
- 40. Cut the Pak Choi in half lengthwise.
- 41. Take the potato packets out of the oven.
- 42. Open the packets.
- 43. Place the Pak Choi in the packets.
- 44. Bake everything for another ten to fifteen minutes in the oven.
- 45. Take the finished lime potatoes with Pak Choi out of the oven.
- 46. Crumble the feta cheese over them.
- 47. Serve the cucumber salad on the side.
