  7. 7. Set the lime zest aside.
  8. 8. Mix two tablespoons of olive oil with half of the lime juice.
  9. 9. Season the oil and juice mixture with salt and pepper.
  10. 10. Add the potatoes to the marinade.
  11. 11. Toss the potatoes well to ensure they are evenly coated.
  12. 12. Place the potatoes on four sheets of baking paper.
  13. 13. Fold the baking paper into small packets.
  14. 14. Twist the ends of the packets tightly.
  15. 15. Secure the packets with kitchen twine or small wooden skewers if necessary.
  16. 16. Preheat the oven to 200 degrees Celsius top and bottom heat.
  17. 17. Bake the potato packets in the preheated oven for about 25 minutes.

  44. 44. Bake everything for another ten to fifteen minutes in the oven.
  45. 45. Take the finished lime potatoes with Pak Choi out of the oven.
  46. 46. Crumble the feta cheese over them.
  47. 47. Serve the cucumber salad on the side.
